Why is my User Average stats graph all over the place?
I have huge peaks and valleys instead of a steady line or a slight drop.
The credit granted is the same on all tasks. 213.76 per task.
I have had only 1 task that errored out due to a programing problem in the task.

You only get the credits after a WU is validated.
Actually you have a high percentage of WUs that needed results from other computers to compare and validate against yours.
With some WUs validated immediately and others having to wait for more results to compare, the graph will never be a flat line. With a low number of results a day your will see big jumps in the graph, with a higher number of results per day this will level out better.

Also note that the graph starts at 910 credits and ends at 1140. It would look quite flat if it was starting at 0, but when you zoom in like that, than of course all those small changes look big.
