I have several GPU's from the old Bitcoin mining days, and am thinking about re-purposing to run here. They use to have 6 GPU's per system using the PCIe x1 risers. Will that work for this application as well, or do I really need the x16 slots?

To get the best output yes you need the X16 slots, but if you just want to help then X1 is better than nothing I think. I have personally never tried it but don't see any reason why it wouldn't, there aren't any time deadlines except the ones every unit has and even though it may take longer you should still be able to finish a unit before the deadline.
